I have yet to try brussel sprouts because, to be quite honest, they don't have the best reputation and I just haven't built up the courage to try them ;-) I am going to give this recipe a shot however - and you should too! Let me know what you think. Leave your comments below.
2 lbs brussel sprouts, trimmed of any discolored leaves and halved
6 oz prosciutto, coarsely chopped
1 cup walnuts, coarsely chopped
2-3 Tbsp extra-virgin olive oil
sea salt, to taste
1. Preheat oven to 400 degrees.
2. Combine all ingredients in a large mixing bowl, and toss with olive oil. Place on a cookie sheet or roasting pan. Roast for 30 mins or until brussel sprouts are light brown.
2. Serve warm.
Yields: 8 servings
